Some summer days it’s just simply too hot to cook indoors. I’d much rather toss everything on the grill and let it do all the work. The end result is tasty food with less cleanup of pots, pans and utensils.
Take these red skin potato packets as an example. It takes only a few minutes to wash the potatoes and prepare the packets, and one knife to clean up. The grill does the rest of the work while I sit in the shade.
Grilled Garlic Red Skin Potato Packets
Ingredients:
- 1 lb bag red skin potatoes
- 4 cloves minced garlic (2 cloves per foil packet)
- 4 tablespoons butter (2 tablespoons per packet)
- salt and pepper
Directions:
- Wash and dry the desired amount of red skin potatoes you want to cook. Quarter each potato and place them on a large sheet of foil.
- Sprinkle with salt and pepper. Add 2 cloves of minced garlic (per packet). Cube 2 tablespoons of butter (per packet) and place on top of potatoes.
- Close foil around potatoes completely. Grill on medium for 30 – 40 minutes, turning over once. They are done when the potatoes are fork tender.
