Summer is winding down so quickly, I just can’t believe it. In an effort to squeeze out the last few months of outdoor grilling, I tested out these honey and soy marinated chicken kabobs.
I was worried that the soy sauce would make these terribly salty but I was so glad that it did not. The sweetness of the honey cuts it nicely and in fact you couldn’t even taste the salt. The chicken kabobs just have a nice sweet flavor.
We loved this recipe! It’s nice and simple but letting the chicken soak in the marinade gives it lots of great flavor. I’ll definitely make these kabobs again!
Ingredients:
- 1 - 2 lbs skinless boneless chicken breasts, cubed
- kabob veggies of your choice ( I used two green peppers and 1 medium zucchini)
- 1/4 cup veggie oil
- 1/3 cup soy sauce
- 1/3 cup honey
- 1/4 teaspoon black pepper
- 1 teaspoon minced garlic
Directions:
- Cut clean veggies and chicken breasts into 1 – 2 inch cubes. Place in large Ziploc baggie.
- In a small bowl; whisk together the oil, soy sauce, honey, black pepper and garlic. Pour into Ziploc bag with veggies and chicken. Toss to mix well. Place baggie in bowl, in case it leaks, and refrigerate for at least 2 hours.
- Preheat grill. Thread marinated chicken and veggies onto kabob sticks or skewers. Place on grill. Cook for 15 – 20 minutes turning as you cook. Remove and enjoy!

can I use olive oil instead of veggie oil? please help asap.. I’m out of veggie oil and can’t get back out. Have everything else.. Thanks

Hello Mark. Sure, I don’t see why you couldn’t use olive oil instead. I’ve used it many times in other marinades so it should work just fine.
