Who would have ever thought Fruity Pebbles cereal and white chocolate chips could go so well together in a cookie? Not me! But that’s what makes these cookies so much fun!
Not only are these buggers tasty but they look so cute as well. I love all of the fun different colors that peek out among the batter and chocolate chips.
These cookies are so soft and fluffy. They have a delicious buttery vanilla flavor with hints of fruity cereal and pops of white chocolate.
The cereal adds just the perfect amount of texture to the cookies. It’s not exactly crunchy but chewy enough to make you realize there’s something different going on.
The recipe couldn’t be any easier. It took me just a few minutes to put the cookie dough together. I was able to get 32 cookies out of one single batch using my medium cookie scoop.
These cookies are a must try if you love that iconic flavor of fruity cereals like Fruit Loops and Fruity Pebbles. And the white chocolate chips add a bit of sugary goodness without having an overload of chocolate flavor.
Ingredients:
- 2 & 1/4 cups flour
- 1 teaspoon baking soda
- 1 & 1/2 sticks unsalted butter (room temp)
- 1 cup sugar
- 1 (3.4 oz) box of instant vanilla pudding mix
- 2 eggs
- 1 teaspoon vanilla extract
- 2 cups Fruity Pebbles cereal
- 1 & 1/4 cups white chocolate chips
Directions:
- Preheat oven to 350 degrees. Line cookie sheets with parchment paper and set aside.
- In a medium mixing bowl, whisk together the flour and baking soda. Set aside.
- With an electric mixer, cream together the butter and sugar until smooth. Add in the dry pudding mix and beat until well blended. Add in the eggs and vanilla extract.
- Slowly add the flour and baking soda into the wet ingredients a little at a time. Mix until combined. Stir in the Fruity Pebbles and white chocolate chips.
- Drop cookies onto baking sheets. I used a medium cookie scoop for mine. Bake for around 10 minutes or until edges just start to brown.
