I’m always on the hunt for easy all-in-one crockpot recipes for quick weeknight meals. I came across a recipe for slow cooker cheesy broccoli and rice and thought “hmm, wonder if I can add chicken to that?”
So that’s just what I did! This Crockpot Cheesy Chicken, Broccoli and Rice meal calls for a handful of ingredients that simply need “dumped” into the slow cooker. Mix ’em up and walk away.
The end result is moist, tender chicken and rice in a yummy, creamy cheese flavored sauce. We left our chicken breasts whole but you could shred the chicken and mix it into the rice if you pleased.
I was worried that with the canned soups and Cheez Whiz that this recipe would be too salty overall. And actually it wasn’t too salty to me or my hubby at all.
This recipe makes a lot so there’s definitely enough to feed 4 – 6 people. Mine may look a bit “runny” to you but that is my own fault.
When I first mixed everything together, I thought it looked way too thick. So I added some chicken broth to it to thin it a bit. After it cooked, I noticed my error.
I should have left it alone. Next time I won’t be adding any additional liquids, lol.
Ingredients:
- 1 - 2 lbs boneless, skinless chicken breasts
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 8 oz jar of Cheez Whiz
- 1 medium onion, diced
- 1 bag frozen broccoli
- 1 cup uncooked brown Minute Rice
Directions:
- In your crockpot, whisk together the soups and Cheez Whiz. Stir in the onion, broccoli and rice. Sink the chicken breasts down into the mixture.
- Cook on low for 6 - 8 hours or until chicken is fork tender.
- Serve with chicken breasts whole or shred them into the cheesy broccoli and rice.
