Anyone who’s never tasted cake batter ice cream can’t begin to imagine what they’re missing. It’s a delicious vanilla flavor ten steps above plain old vanilla. And just like the name describes, it has a vanilla cake flavor to it also.
Over the years I’ve tried quite a few different brands of ice cream in this flavor. Most of them have been good but nothing compares to this homemade recipe. I don’t know why it never occurred to me that cake batter ice cream would actually have cake batter in it. But it does!
This ice cream tastes amazing! It has a much deeper cake batter flavor than any store bought I’ve had. And it’s super smooth and creamy.
I know one thing, I’ll never buy store bought cake batter ice cream ever again. I will only make it by hand in the future. I’m even thinking of trying a few different cake batter flavors like butter pecan, lemon and strawberry.
Cake Batter Ice Cream

Ingredients:
1 cup whole milk
3/4 cup sugar
2 cups heavy whipping cream
1 teaspoon vanilla extract
3/4 cup boxed vanilla cake mix
Directions:
1. In a medium mixing bowl, whisk together the milk and sugar. Continue mixing until sugar is dissolved.
2. Stir in the heavy cream and vanilla. Slowly whisk in the cake mix to try to break up any lumps.
3. Pour the ice cream mixture through a handheld strainer (to remove any lumps) as you add it to your ice cream maker. Mix in your machine for 20 – 30 minutes.
4. Transfer to a freezer proof container and freeze until ready to eat.
