Peanut butter cookies are good but ones with three types of peanut butter in them are even better! These super soft cookies have peanut butter, Reese’s peanut butter chips and Reese’s pieces candies in them. They turned out so yummy and practically just melt in your mouth.
Cookie baking for me is usually something I do to keep the household cookie monster (aka, the hubby) at bay. I may eat one or two of my cookies but they get gobbled up by said cookie monster. But these peanut butter cookies were so good that I fought hubs for my fair share. They were just too good to let him eat them all himself!
Ingredients:
- 1/4 cup canola oil
- 1 & 1/2 sticks unsalted butter, room temp
- 2/3 cup creamy peanut butter
- 1/3 cup powdered sugar
- 1 cup brown sugar
- 1 whole egg
- 1 egg yolk
- 1 tablespoon vanilla extract
- 2 & 1/2 cups flour
- 1 & 1/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 bag Reese’s peanut butter chips
- 4oz box Reese’s pieces candies
Directions:
- Preheat oven to 350°.
- With your electric mixer; cream together the oil, peanut butter, powdered sugar and brown sugar until smooth and creamy. Add whole egg, egg yolk and vanilla.
- In a separate bowl; sift together the flour, baking powder, baking soda and salt. Slowly add it into your wet ingredients and blend well. Mix in the peanut butter baking chips and Reese’s pieces.
- Drop by rounded tablespoon (I used a medium cookie scoop) on parchment or silicone mat lined baking sheets about two inches apart. Slightly flatten with your fingers. Bake for 10 minutes or until bottom edges just start to brown.
- Let cool and enjoy with a tall glass of milk!
