It’s been quite a while since I’ve posted and I’m finally reorganized after the holidays. I have a few good recipes to post for all the goodies I made over Christmas. I’ll start with my easy tomato and basil bruschetta recipe.
This recipe is a combination of a few different ones I found online and customized to my own likes and needs. Most of the bruschetta recipes only served a few people and I needed to adjust for around 15 people.
With tomatoes being out of season here in Pennsylvania, I decided to use canned tomatoes for the best, freshest flavor. If you can get fresh tomatoes, I’d use those instead.
I was a little nervous when I tasted my creation at first. I thought it was a little heavy on the garlic but my tasters gave it a rave review. If you’re not fond of garlic you could leave a clove or two out for a lighter garlic taste.
Ingredients:
- (2) 28oz cans of petite diced tomatoes
- 4 cloves of garlic minced
- 6 basil leaves, finely chopped
- 2 tablespoons extra virgin olive oil
- 2 tablespoons balsamic vinegar
- salt and pepper
- 1 large loaf of french bread
- melted butter
Directions:
- Empty both cans of petite diced tomatoes and drain thoroughly. You want to have the least amount of tomato juices possible.
- While the tomatoes are draining, peel and mince all 4 cloves of garlic and finely chop all 6 leaves of basil.
- Combine drained tomatoes, minced garlic and chopped basil. Add the extra virgin olive oil and balsamic vinegar. I made my bruschetta a day in advance so the flavors of the ingredients have time to combine and meld together.
- Mix ingredients well, cover with plastic wrap and store overnight in the refrigerator.
- An hour or so before serving, add salt and pepper to taste.
- Slice the french bread into 1/2" thick slices. Brush both sides of the bread with melted butter and toast briefly in the oven at 350°F.
- Toast each side of bread until a light golden brown. Remove from the oven and serve.

Love your blog and recipes .
I tried it – it’s AWESOME and I ate it ALL!
Great addition of the vinegar. I haven’t made it with that, but now I’ll have to give it a try.
