This easy casserole recipe bring two favorites together into one, tater tots and enchiladas! If you like both of those things, then you’ll love this Tater Tot Enchilada Casserole.
All you need to do is brown some ground beef (or turkey), drain it, then mix it with the other ingredients. Pour it into a baking dish, top with cheese and toss it in the oven. So quick and simple!
The only thing I would change, when I make it again, is to add some veggies and black beans into the mix. Maybe some sweet corn and diced red peppers would be good.
Ingredients:
- 1 lb ground beef
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 tablespoons of fajita seasoning
- 4 cups of frozen tater tots (about 1/2 bag)
- 10 oz mild red enchilada sauce
- 2 cups shredded pepper jack cheese
Directions:
- Preheat oven to 350 degrees.
- In a large skillet over medium-high heat, brown ground beef, onions and garlic. Drain excess fat.
- Add fajita seasoning to the skillet and mix well. Add enchilada sauce and mix well. Add frozen tater tots and stir to coat.
- Pour into a baking dish coated with non-stick spray. Top evenly with shredded cheese.
- Bake for about 20 - 25 minutes.
