Even though I am half Italian, I have yet to try an Italian Cream Cake. When I came across a recipe for them in cookie form, I decided now was the time.
These cookies contain both coconut and pecans so if you are not a fan of either of those, then these Italian Cream Cake Cookies aren’t for you.
They are really easy to make with your dough starting with a cake mix. With the addition of a few other basic ingredients you’ll end up with delicious, moist cookies.
And the glaze adds a bit of sweetness with even more coconut and pecans. Yum!
Ingredients:
- 1/2 cup unsalted butter, softened
- 8 oz cream cheese, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1 boxed white cake mix
- 1/3 cup powdered sugar
- 1/2 cup sweetened shredded coconut
- 1/2 cup chopped pecans
- Glaze:
- 4 oz cream cheese, softened
- 4 tablespoons milk
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- 1/4 cup sweetened shredded coconut
- 1/4 cup chopped pecans
Directions:
- Preheat oven to 350 degrees.
- In your stand mixer, beat together the butter and cream cheese until smooth. Add in the egg and vanilla. Beat until combined, scraping down the sides.
- Add in the cake mix and powdered sugar and beat just until combined. Add in the coconut and pecans and beat until mixed well.
- Drop dough by tablespoon or cookie scoop onto a parchment lined baking sheet 2 inches apart. Bake for about 10 minutes or until edges start to brown.
- Let rest on baking sheets for a few extra minutes before transferring to a cooling rack. Cool completely before adding the glaze.
- To make the glaze: Beat together the cream cheese, milk, vanilla and powdered sugar until smooth. In a blender, pulse the coconut and pecans for a few seconds to make smaller pieces. Mix into the glaze. Spread the glaze on the cookies.

So when was I supposed to have added the powdered sugar to glaze? I tried to mix cream cheese, milk and vanilla and it turned into a gloppy, lumpy mess

Ooops, I must have left that out. I’m so sorry for the confusion. It should have went in with the cream cheese, milk & vanilla.
