If you’re looking for a flavorful but simple homemade chicken marinade, this recipe might be for you. The grilled chicken ends up moist and flavorful with a nice sweetness to it. Don’t worry if you’re not a fan of lemon flavors, the lemon isn’t very strong once it’s cooked.
Be sure to leave yourself enough time to let the chicken marinate for at least an hour or two before cooking. I served my honey lemon chicken with green beans and grilled potato wedges, recipe is also included below.
Ingredients:
- 1 – 2 lbs boneless, skinless chicken breasts
- 1 large lemon (juice and zest)
- 3 tablespoons honey
- 2 teaspoons finely chopped garlic
- 1 & 1/2 teaspoons ground cumin
- 1 teaspoon dried oregano
- 1/2 cup extra-virgin olive oil
- salt and pepper
- 5 – 6 medium sized Idaho potatoes
- salt and pepper
- extra virgin olive oil
Directions:
- In a large Ziploc plastic bag, mix all of the ingredients together. Seal bag and smoosh it around so that all the chicken and spices get mixed and coated well. Refrigerate 1 to 2 hours.
- Remove marinated chicken from Ziploc bag and cook on preheated grill until chicken is cooked through.
- For the potato wedges, wash and dry potatoes. Cut each potato into 6 wedges. Toss in large mixing bowl.
- Sprinkle potatoes with salt and pepper. Drizzle olive oil over potatoes and toss to evenly coat wedges.
- Cook potatoes on grill set on medium (around 350°) in an even layer for about 30 – 40 minutes, turning over once.
