Over this past year, my affection for cornbread has grown deeper as the days go by. Like homemade biscuits, a good cornbread can go with just about any meal. And I’ve been trying my fair share of recipes trying to find just the right one. Something that’s not too dry, has nice flavors and isn’t too dense. A lot of the recipes I haven’t even posted here because they were a bust.
But this evening I think we found a keeper! This cornbread comes out nice and fluffy and very much like cake. It’s light and airy with good cornbread flavor and is very moist. The best part of homemade cornbread is eating it warm out of the oven with just a touch of butter. Yum!
Ingredients:
- 1/2 cup yellow corn meal
- 1 and 1/2 cup flour
- 2/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/3 cup vegetable oil
- 3 tablespoon unsalted butter, melted
- 2 eggs
- 1 and 1/4 cup milk
Directions:
- Preheat oven to 350°.
- In a large mixing bowl, combine all of the dry ingredients.
- Mix in the wet ingredients just until blended. Don’t worry, batter will be pretty runny.
- Pour into an 8×8 baking pan coated with non-stick cooking spray. Bake for 35 – 40 minutes or until starts to brown on top and edges.

I have been searching for literally YEARS for a cornbread recipe I actually like, and time after time I make someone’s idea of “awesome fluffy cornbread”, and I’m always terribly disappointed. I love the cornbread you get at Montana’s restaurant, the sweet yellow cakes of fluffy goodness so amazing that I always get a half-dozen to go on our way out the door. They used to sell a mix and then quit, and I was devastated! I’vd been searching and searching… and finally found my one true love that will now become a staple in my home. I’ve been trying different recipes for years to find this fluffy cornbread, and your the winner for the blue ribbon award. My ex-wife and my grandmother made this all the time, but they done it with a pinch of this and a hand full of that. But they’re hands are quite different in size compared to mine. Thank you so much.

Very sweet, cut the sugar in half and it will be great. I made it tex mex and was great w/ less sugar.

This is THE BEST recipe. I’m Southern and this is Yankee cornbread (because of the addition of sugar!) but it is without a doubt the most delicious-tasting cornbread and now it’s the only one I make. My thanks to whoever did all the experimenting to come up with the ingredients and ratios. I half the amount of sugar though because although I love Yankees, I’m still Southern. ha!

Made this recipe. I LOVE it. Left out the salt and turn milk into buttermilk. This is now my favorite snack cake. The texture is great. The taste is excellent. I made it in a loaf pan for easy serving.

Long ago my family took me to The Silver Mine restaurant in Ct. It closed years ago. They had the best cornbread on the planet. About 3 inches high-quality. It was cake like and so moist and lightly sweet. It was buttery and fluffy. I remember closing my eyes and melting in my chair!!!! I have been chasing recipes to copy that one. So far yours is the closest. So glad! My question is why is the center higher in the middle and not all over the rest of the cake? If I added some honey in addition to your recipe, would that make it sweeter or would it drop in height? Just curious.

Adding a few teaspoons of honey really shouldn’t change the consistency. It should add some sweetness as well. So glad you enjoyed the recipe!
