Chilly weather has brought along with it a craving for some good old comfort food. It’s time to start breaking out the stews, soups and roasts. Today we’re making a quick and easy hearty homemade beef stew.
I love this recipe for not only it’s tasty flavor but the convenience of it. All you need to do is dedicate about a half hour of prep time and the crock pot works it’s magic.
I serve my beef stew with some refrigerated ready made biscuits. Extra bonus: this recipe is enough for two meals for two people.
Ingredients:
- 1 - 2 lbs cubed beef stew meat
- 2 tablespoons flour
- 3 stalks celery, cut into 1 inch pieces
- 1lb baby carrots
- 4 medium potatoes, peeled and cubed
- 1 can low sodium beef broth
- salt and black pepper
Directions:
- Remove stew meat from package and place in large crock pot. Sprinkle with salt, pepper and flour. Stir until meat is coated in flour.
- Clean and chop veggies. Add to meat in crock pot and stir to mix.
- Pour in the beef broth and stir. Cook on high for 4 - 6 hours or until veggies become fork tender, stirring occasionally. Season with more salt and pepper if desired.
* There should be plenty of gravy now but may be too thin for your liking. If you want to thicken it, whisk together a few tablespoons of flour with some water in a separate bowl. Gradually pour in a little of the flour mix and stir. Give it a few minutes to thicken up before adding any more.

Amanda – I’m making it for dinner tonight. I just put it in the crock pot. I did add about a 1/4 cup of onion. I know my mom used to do that when she fixed a roast to add flavor to it. They are big enough I can take them out and not eat them. I do not like onion, but love the flavor of onion added to stews/roasts. I will reply later tonight after we have eaten it. Thanks again ~Kim

Kim, Yeah onion is a good add in for this stew. I don’t put any in mine cause my husband hates onion. Occasionally I will throw in a handful of frozen pearl onions for flavor though. They’re nice and easy to pluck out before he gets any, hahaha!
