
These oatmeal cookies are loaded with dried cranberries and white chocolate chips. They smelled like heaven when they were baking, mmm!
They’re soft and a little bit tart from the cranberries. But don’t worry, the white chocolate chips mellow the tartness out nicely. So good!


Cranberry White Chocolate Oatmeal Cookies
 
Ingredients:
- 2/3 cup butter, room temp
 - 2/3 cup brown sugar
 - 2 eggs
 - 1 & 1/2 cups old-fashioned oats
 - 1 & 1/2 cups flour
 - 1 teaspoon baking soda
 - 1/2 teaspoon salt
 - 6oz bag dried cranberries
 - 2/3 cup white chocolate chips
 
Directions:
- Preheat oven to 375º.
 - Using an electric mixer, beat butter and sugar together until light and fluffy. Add eggs, mix well.
 - Combine oats, flour, baking soda and salt in a separate mixing bowl. Gradually add to butter mixture, mixing well after each addition.
 - Stir in dried cranberries and white chocolate chunks.
 - Using a medium cookie scoop, scoop dough onto parchment lined baking sheets about 2? apart.
 - Bake 10 - 12 minutes or until lightly browned. Remove from baking sheets and let cool completely.
