I love cooking at least one hearty breakfast on the weekends. One of our trusty favorites is good old classic pancakes. I used to use Bisquick until I tried this super easy buttermilk pancake recipe. With this recipe, you get extra fluffy pancakes. I’ve even made this recipe with skim milk and it works just as well.
Simple Buttermilk Pancakes
Ingredients:
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups well shaken buttermilk (or 1 & 1/2 cups milk)
- 2 large eggs
- 1/4 cup vegetable oil
Directions:
- Mix all of the dry ingredients together in medium bowl. Add all wet ingredients at once and stir just until combined. Batter will be slightly lumpy.
- Heat a griddle pan on medium. Spray with non-stick spray and drop desired amount of batter onto heated pan. Cook on first side until bubbles begin to form on surface, 2-3 minutes. Flip over and cook another 2-3 minutes until golden brown and center springs back when lightly touched.

I love pancakes! Small confession, I have never made them from scratch! My boys love the boxed stuff, but I think I will surprise them with this.
