Cooked carrots are one of my favorite veggies. Especially the ones cooked in stews and roasts. But sometimes if I’m lucky, I can snatch some sweet glazed ones at a buffet or event. Mmm, those kind make my mouth sing.
Instead of waiting, I set out to make my own. I chose this simple brown sugar carrot recipe from BettyCrocker.com.
The carrots were cooked to perfection and the brown sugar added just the right amount of sweetness. My husband even went for seconds even though he doesn’t normally like cooked carrots.
Ingredients:
- 1lb bag of baby carrots
- 2/3 cup brown sugar
- 1/4 cup butter
- 1/2 teaspoon salt
Directions:
- Heat water in medium saucepan until boiling. Add carrots, reduce heat and simmer until carrots are fork tender.
- While carrots are cooking; heat brown sugar, butter and salt in a 12 inch skillet. Stirring often, cook until sugar is melted and bubbly. Remove from heat.
- Drain carrots and add to brown sugar mixture. Return to low heat and cook for additional 5 - 10 minutes until carrots are nice and glazed.
