It’s that time of year when those of us who plant zucchini become overwhelmed with too much of this plentiful veggie. So much so that you can run out of ideas on how you can prepare them.
I was searching recipe blogs for some recipe ideas and came across some very different and unique ones. I decided that there has to be more people than just me looking for zucchini recipe ideas.
So, I combined them into one list of awesome zucchini recipes. Enjoy and don’t be afraid to share these recipe blogs with others!
Low Sugar and Whole Wheat Zucchini Bread With Blueberries and Pecans – This bread looks so delicious even though it’s a healthy alternative with Splenda and whole wheat flour.
Zucchini Boats – A meat lover’s dream of stuffing zucchini halves with ground hamburger, bread crumbs and spices.
Chocolate Zucchini Cupcakes with Chocolate Cream Cheese Frosting – This recipe will satisfy any sweet tooth with a chocolate obsession. They look very rich and decadent.
Zucchini Muffins with Cranberries & Chocolate Chips – This looks like a super simple recipe and the muffins look incredible!
Double Chocolate Zucchini Cake – This cake looks moist and delicious. I like the idea of making individual little mini cakes too.
Zucchini Breakfast Casserole – This casserole looks so cheesy that your picky eaters probably won’t even know you’ve hidden healthy zucchini in it!
Parmesan Zucchini Slices – This simple recipe is a healthy option for anyone looking to simply season and bake this veggie without adding any carbs.
Zucchini Gratin – This dish looks sinfully delicious with the added bonus of pancetta.
Zucchini Ricotta Cheesecake – This unique recipe is like nothing I’ve ever seen before. I’d be very tempted to taste this one.
Sausage Zucchini Bake – Oh My! Definitely not figure friendly,it’s loaded with a pound of sausage, spaghetti sauce and shredded cheese. Looks heavenly.
Zucchini Fries – I love fried zucchini but these are so much cooler. These ones are thin strings of zucchini.
Tortellini and Zucchini Soup – I never thought about adding zucchini to soup but this looks yummy.
Zucchini Nachos – Another interesting idea!
Grilled Zucchini and Grape Tomato Salad – A simple salad recipe of these two ingredients along with herbs, balsamic vinegar and parmesan cheese.
Zucchini and Corn Fritters – Simple ingredients combine to make these delicious looking fritters.

She uses summer squash, but I’ve done it with zucchini (and pesto instead of tomato sauce). Truly life changing!

This is just in time for me, I’m on zucchini overload. I’ll be testing out the sausage zucchini bake and the breakfast casserole. They both look delish!

I appreciate being included in this (yummalicious) list. I have to say, though, the sausage zucchini bake, especially when you use ground turkey and sausage seasoning (described at the post), is pretty healthy and low-carb. When you compare it to something like lasagna with all that pasta, it’s a particularly good choice. We LOVE it at our house! Enjoy!
