Brr, it’s starting to look like fall around these parts. While I am ready for cooler weather, I am not looking forward to snow. I wish fall could stick around for several months. I like that mix of semi-warm days and cooler evenings. When it gets to colder days and colder nights, that’s when I start to cringe. Cause I know daylight savings time is coming and bringing snow with it.
The cooler weather is making cooking and baking more appealing though. It’s so nice to bake some cookies with the air conditioner off and the windows open. Today I’m sharing a new chocolate chip cookie recipe with you. These cookies turn out nice and chewy but a little crispy around the edges. That was easily remedied though with a slice of bread in the storage bag with them.
Ingredients:
- 2 cups plus 2 tablespoon flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 & 1/2 sticks unsalted butter, room temp
- 1 cup brown sugar
- 1/2 cup sugar
- 1 large egg
- 1 egg yolk
- 2 teaspoon vanilla extract
- 1 & 1/2 cups semisweet chocolate chips
Directions:
- Preheat oven to 325°.
- Whisk dry ingredients together and set aside.
- Cream together the butter and sugars. Add in the whole egg, yolk and vanilla.
- Gradually beat in the dry ingredients. Add chocolate chips.
- With a medium sized cookie scoop, drop onto parchment lined baking sheets about 2 inches apart. Bake 17 minutes or until edges start to brown.
- Let rest for a minute before transferring to cooling rack. (makes around 26 medium sized cookies)
