Ginger Molasses Cookies are one of my husband’s favorite cookies so I always need to make him a batch each Christmas. The only thing he requests is that they are soft and chewy. And these fit that description to a T.
Unfortunately they were a little too good though. It took me a few days to find time to take pics so several disappeared on me before they made it safely to the freezer.
It’s a good thing this ginger molasses cookie recipe made a very large batch. I used a small cookie scoop and got 74 cookies.
Ingredients:
- 4 cups flour
- 4 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 1 teaspoon ground cloves
- 1 teaspoon ground ginger
- 1 teaspoon salt
- 1 and 1/2 cups unsalted butter, softened
- 2 cups sugar
- 1/2 cup molasses
- 2 eggs

Directions:
- Preheat oven to 375 degrees.
- In a mixing bowl, whisk together the flour, baking soda, cinnamon, cloves, ginger and salt. Set aside.
- In your stand mixer, beat together the butter and sugar until smooth. Add in eggs and molasses, beat until combined.
- Gradually add in your dry flour mixture until combined.
- Set aside additional sugar in a small bowl. Roll dough into 1 inch balls and roll into the sugar to coat the entire outside. Place on parchment lined baking sheets 2 inches apart.
- Bake 8 - 10 minutes or until edges firm up. Let rest on baking sheets for another minute before transferring to cooling racks.
