I’m really loving these one pot meals lately. They make easy and very filling weeknight meals with only one pot getting dirty in the process.
Today I’m sharing with you this delicious Beefy Enchilada Skillet recipe. It’s loaded with ground beef, black beans, corn and rotini pasta.
There’s so much flavor packed into this one! It’s topped with shredded sharp cheddar cheese and tortilla strips for a bit of crunch.
Ingredients:
- 1 lb ground beef
- 1 taco seasoning packet
- 1 can sweet corn, drained
- 1 can black beans, drained and rinsed
- 1 can enchilada sauce
- 8 oz tomato sauce
- 2 cups rotini pasta, dry
- 1 and 1/2 cups chicken broth
- 1 cup shredded sharp cheddar cheese
- tortilla strips, optional
Directions:
- Brown ground beef over medium-high heat until no longer pink. Drain fat.
- Stir in the taco seasoning, corn, black beans, enchilada sauce and tomato sauce. Mix well.
- Add in the rotini pasta and broth. Lower heat to medium-low, cover and continue cooking until pasta is soft, stirring often.
- Remove from heat, top with shredded cheese, cover with lid and let set until cheese melts. Serve topped with crunchy tortilla strips if desired.
