Barbecue sauce and cheese on pasta? Yep, and it’s delicious! I was really skeptical to try this BBQ Cheesy Chicken Pasta but I’m so glad I did.
This recipe is super easy because it starts with an already cooked rotisserie chicken from your local grocery store. You only need one pan to make it as well so it’s a great weeknight meal with easy cleanup.
This pasta is nice and creamy from the cheese and the barbecue sauce isn’t over powering. It just adds a nice bit of sweetness and smokiness to the flavor.
We loved this one so much! I can already tell that this will be added to my list of go-to quick and easy meals.
Ingredients:
- 2 tablespoons olive oil
- 1/2 medium onion, diced
- 1 teaspoon garlic, minced
- 2 cups (8oz) Rotini pasta, uncooked
- 14.5 oz can petite diced tomatoes
- 1 & 1/2 cups chicken broth
- 1/2 cup barbecue sauce
- 1 medium rotisserie chicken (I used all of the meat I could get off of it)
- 2 cups colby jack cheese, shredded
Directions:
- In a large skillet, heat olive oil on medium-high heat. Saute the diced onion until tender. Add the garlic and cook another minute.
- Add the uncooked pasta, tomatoes, broth, bbq sauce and shredded chicken to the skillet. Mix well and bring to a boil.
- Reduce heat to low and simmer, stirring occasionally until pasta is tender.
- Top with the shredded cheese, cover with a lid and let cheese melt. Finish with a drizzle of bbq sauce.

My mom can’t eat seeds, if I wanted to make this for dinner for her one night, can I substitute the can of petite tomatoes with regular tomatoes that I can make sure no seeds get in there?

Hi Lauren. You could give it a try but you may have to add some water or some extra broth to make up for the missing juices in the canned tomatoes.

I don’t see why it would be an issue. It may not be as easy to fit the dry noodles in the pan so that they cook evenly though.
