This quick snack recipe is a super simple way to dress up any boring store bought brownie mix. In around 30 minutes you’ll have about a dozen and a half rich chocolate brownie bites with a caramel center.
I really like the added sweetness that the chocolate caramel candy gives to the brownies. The Rolos do not melt completely so you’re left with a nice solid surprise center. Plus they’re bite sized and easily hand held for any young children to enjoy without a mess.
Rolo Brownie Bites
Ingredients:
Brownie Mix of your choice (I used Betty Crocker)
18 – 20 unwrapped Rolo chocolate caramel candies
Directions:
1. Preheat oven to 350° and spray mini cupcake tins with non-stick cooking spray. Prepare brownie batter according to package directions.
2. Drop brownie mix by the tablespoon into each mini cupcake tin cavity. Bake 12 – 15 minutes or until toothpick comes out clean.
3. Push one Rolo caramel candy into each bite until top is flush with the brownie. Let cool completely in pan. Remove and enjoy!
I’ve never been a big huge fan of brownies but I do love me some Oreos. So naturally when you add Oreos into brownie batter, you betcha I’m gonna eat me some!
I thought it might be weird to have crunchy cookies in brownie batter but they actually soften and just blend into the batter. The crushed Oreos on top do add that bit of crunch. The white chocolate drizzle is optional but I liked that added touch of sweetness on top.
This isn’t a wimpy brownie recipe either, you get a generous 9×13 pan of brownies out of it. Not just a scrawny 9 inch square baking pan. I hate going through the trouble of making homemade brownies to only get a tiny pan that hubs devours in an hour. Oh yeah, he can hoover brownies like no other!
Give these brownies a try, they are very good. Next time I need a picnic dessert, I think I’m gonna take these. They are sure to be a crowd pleaser plus they are so rich that a small piece goes a long way.

Boy I can’t believe how quickly the holidays are coming this year. It feels like Halloween was just the other day but then I look at my calender and *poof*, Thanksgiving is only two weeks away!! How in the world did that happen?!
Although I hate for the holidays to come so quickly, I am looking forward to the week after Christmas. We’ve decided to both take that week as vacation during which we’ll tackle our kitchen! We’ve been in our home now for over 10 years even though it was only to be our “starter” house. And with the state of the economy right now, it looks like we’ll be staying for a few more.
We’ve already put a ton of money, blood, sweat and tears into remodeling our house and we’ve kinda maxed out what we’ll be able to get out of it when we sell. So unfortunately we won’t be installing a gourmet kitchen but at least I’ll still be getting new cabinets, granite counters, tile floor and back splash. It sure beats our old cabinets that I painted a few years back so I’m very excited!

I was having a major chocolate craving the other day so I just had to scour the pantry to see what I could come up with. Luckily I keep plenty of baking supplies in back stock so I don’t have to run to the store like a mad woman. We all know what we women can be like if we want some darn chocolate and we don’t have any. Watch out!
