This year seems to be moving incredibly fast. Once September came, it’s like someone hit the fast forward button. I can’t believe tomorrow is Thanksgiving already!
Now is when time is at a premium. There’s so many things to do to get ready for Christmas. Shopping, baking, decorating, wrapping and so much more! There just isn’t enough time to whip up elaborate dinners.
Luckily this Stuffed Pepper Soup recipe is quick and easy enough that you can throw it together in minutes and still have a delicious hearty homemade supper. This makes a large batch of soup so you’ll have plenty of leftovers to eat the next day or freeze for another time.
All you need to do is simply brown up some ground beef (or turkey) along with onions and green peppers. Add it into a pot with other canned ingredients, spices and rice. Let it cook for about an hour and you’re done.
Ingredients:
- 2 lbs ground beef
- 1 small onion, diced
- 2 green peppers, diced
- 29 oz can of tomato sauce
- 29 oz can of diced tomatoes
- 4 cups of beef broth
- 1 tablespoon salt
- 1 & 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 3 cups cooked rice
Directions:
- In a large skillet over medium-high heat, brown your ground beef with the diced onions and green peppers. Drain excess fat. Transfer to a large stock pot.
- Add in your tomato sauce, diced tomatoes, broth, salt, pepper and garlic powder. Mix well. Cover and cook on medium for about 30 minutes.
- Add cooked rice, decrease heat to low and continue cooking for another 30 minutes.
