I bought a bag of Hershey’s cinnamon chips thinking that I would use them in some homemade pancakes. But I saw this oatmeal cinnamon chip cookie recipe on the back of the bag and decided to try it instead.
I like oatmeal cookies but I hate raisins, so this seemed like the perfect cookie recipe to me as long as I left out those little buggers.
The cookies turned out really good. They are so soft, moist and flavorful. My batch yielded a little less cookies than stated in the recipe but that was because I made mine a little larger.
Ingredients:
- 1 Cup Butter (softened)
- 1 Cup Light Brown Sugar
- 1/3 Cup Granulated Sugar
- 2 Eggs
- 1 & 1/2 Teaspoon Vanilla Extract
- 1 & 1/2 Cups All Purpose Flour
- 1 Teaspoon Baking Soda
- 2 & 1/2 Cups Quick Cooking Oats
- 10oz Bag Cinnamon Chips
Directions:
- Heat oven to 350 degrees.
- Beat butter, brown sugar and granulated sugar in bowl until creamy. Add eggs and vanilla; beat well.
- Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips (batter will be stiff).
- Drop by heaping teaspoons onto ungreased cookie sheet.
- Bake 10 to 12 minutes on until lightly browned. Cool 1 minute; remove from cookie sheet to wire rack.

I bought a bag of cinnamon chips about a week ago and was wondering what to do with them ~ now I know. I don’t like raisins in my oatmeal cookies either, so these sound perfect for me. Thanks for the idea 🙂
