I can’t believe Christmas is just a few days away! Where has this year gone? I have a good recipe to share with you that I tried for the first time this past week. So if you’re looking for a unique casserole to take for that holiday party, stay tuned!
This casserole has all the goodies you’d find on a loaded baked potato with a little bit of ranch added in. All you need to do is mix the ingredients into a baking pan and you’re done. Makes for a quick and easy holiday party dish.
I like to make casserole recipes like this in a disposable aluminum pan so I can take it and forget it. No worrying about getting your pan back plus no cleanup! Happy holidays!
Ingredients:
- (2) 16oz sour cream
- 2 cups shredded sharp cheddar cheese
- (2) 3oz bags real bacon bits
- 1 packet dried Ranch Dip mix
- 1 bag frozen shredded hash brown potatoes
Directions:
- Preheat oven to 400°. Spray 9×13 baking pan with non-stick spray.
- Mix all of the ingredients together in a large bowl. Pour casserole mix into pan.
- Bake 50 – 60 minutes or until edges are bubbling and top is nice and brown.

I made this casserole yesterday for a pot luck. It is defintely missing something, like some kind of liquid, so it isn’t so dry.
myfindsonline says
Hmm, that’s weird. Mine was atually nice and moist and not dry at all. Sorry you didn’t enjoy the recipe as much as I did.
Flea says
Some people add a can of cream of mushroom or cream of chicken to keep it from being so dry.
myfindsonline says
Thanks for the tip, I’ll have to try that some time!
Cheri-Beri says
I made these tonight for a potluck. Perfect and delicious. I added 3 sliced green onions because I had them. 🙂 Thanks for a crowd pleaser!

You’re welcome Cheri, glad you liked it!

How big is the bag of hashbrowns?
myfindsonline says
Hi Gillian. I believe the size of the bag is 32oz.
Sandy says
How would this hold up mixed the night before? Anyone tried it?
myfindsonline says
It will do fine if made the night before and left in the fridge overnight. I’ve even assembled it a few days in advance and tossed it in the freezer until I was ready for it.
Meg says
Is it a total of 32 oz of sour cream?
Dacia says
Wondered the same.
myfindsonline says
Yes, 32oz total.
Hayden says
I was going to make this for a bbq this weekend. Almost 20 people will be there. Should I double this recipe?
myfindsonline says
Hi Hayden. Yes, I probably would double the recipe for that many people.
