Anyone who’s never tasted cake batter ice cream can’t begin to imagine what they’re missing. It’s a delicious vanilla flavor ten steps above plain old vanilla. And just like the name describes, it has a vanilla cake flavor to it also.
Over the years I’ve tried quite a few different brands of ice cream in this flavor. Most of them have been good but nothing compares to this homemade recipe. I don’t know why it never occurred to me that cake batter ice cream would actually have cake batter in it. But it does!
This ice cream tastes amazing! It has a much deeper cake batter flavor than any store bought I’ve had. And it’s super smooth and creamy.
I know one thing, I’ll never buy store bought cake batter ice cream ever again. I will only make it by hand in the future. I’m even thinking of trying a few different cake batter flavors like butter pecan, lemon and strawberry.
Ingredients:
- 1 cup whole milk
- 3/4 cup sugar
- 2 cups heavy whipping cream
- 1 teaspoon vanilla extract
- 3/4 cup boxed vanilla cake mix
Directions:
- In a medium mixing bowl, whisk together the milk and sugar. Continue mixing until sugar is dissolved.
- Stir in the heavy cream and vanilla. Slowly whisk in the cake mix to try to break up any lumps.
- Pour the ice cream mixture through a handheld strainer (to remove any lumps) as you add it to your ice cream maker. Mix in your machine for 20 – 30 minutes.
- Transfer to a freezer proof container and freeze until ready to eat.
