Oh my, you have got to try this one! This crockpot chicken and stuffing recipe is so delicious and tastes just like Thanksgiving came early. It is so, so good and super easy to make.
The original recipe called for adding frozen green beans but instead I chose to use some canned corn. You could substitute just about any veggie you wanted to though.
The stuffing comes out very soft and just melts in your mouth. And the chicken breasts are so moist and tender that they are just falling apart. It’s a definite must try recipe!
Ingredients:
- 1 & 1/2 - 2 lbs skinless, boneless chicken breasts (3 or 4 large)
- 1 box Stove Top stuffing
- 8 oz sour cream
- 10.5 oz can cream of chicken soup
- 1/2 cup water
- 15.25 oz can sweet corn (optional)
Directions:
- Place chicken breasts in the bottom of the crockpot.
- In a mixing bowl, stir together the stuffing mix, sour cream, soup and water. Spread evenly on top of the chicken breasts.
- Evenly sprinkle corn on top.
- Cover and cook on low for 5 - 6 hours or until chicken is fork tender. You can either leave the chicken breasts whole or shred them into larger chunks with two forks.

I used 2 boxes of stuffing 5 chicken breasts, 1 1/2 cups of sour cream 1 1/2 cans cr. of chicken soup, celery, onion and carrots. Do you think I should add anything else

Omg! My husband flipped over this, he said I should make it at least once a week , he loves stuffing , lol. It had a little too much fluid so I poured some off , I may use a 1/4 of water next time .

I make this but in a different different way. I use 2 boxes of stuffing and mix melted butter in it. Then put boneless chicken thighs Ontop then mix 1 can of cream of chicken and 1can of cream of mushroom with a can of chicken broth and mix 1/4 to 1/2 with the stuffing b4 I put in crockpot. Then put the rest Ontop of chicken and stuffing. And cook on low for 8 hours. If it add corn. I use aluminum foil to make a small side section and put the corn in by itself on one side and the the other stuff in the other section. That’s if I don’t want to cook the corn by itself after I get home.

I would mix the shredded chicken in with everything so it stays nice and moist. You may have to only cook it for 2 hours depending on your crockpot. I would start there are check it, then extend the time as needed. Hope it works out ok.

Sure, you could turn it to high for the last hour or two if that’s what you mean. But just one single hour on high will not cook it enough.

As far as I can recall the seasoning is already added into the Stove Top stuffing mix. But they do have a low sodium version you can buy.

You can, although the USDA does not recommend it. https://www.fsis.usda.gov/shared/PDF/Slow_Cookers_and_Food_Safety.pdf You will need to adjust cooking times though.

I had 6 large chicken breast, so I doubled everything. I only have 6 hours to cook. The crock pot is full. Do you think six hours on high would work? I was concerned that low heat would not be enough? I have done the original recipe before and we loved it!

Hi Terri. I think you should be ok. I’ve done lots of big batches of chicken in my crockpot on high and they never take more than 5 – 6 hours. It will depend on how hot your crockpot runs and how thick the breasts are though. Good luck!

I use canned greenbeans instead of corn and two boxes of stuffing. This can also be made with Thanksgiving leftovers: chopped turkey, stuffing, gravy, and geenbean casserole all mixed together.
