Not only do I love how cute these little Brownie Crinkle Cookies turned out but they are tasty as well as adorable. This cookie recipe could not be any easier either. All you need is a boxed brownie mix and a few basic pantry ingredients.
The dough turns out so thick and rich, I was worried I had done something wrong. It’s a little difficult to roll the dough into balls since it is so sticky. I let my small cookie scoop do the work for me.
I just scooped the dough and dropped it into the powdered sugar. Once you roll it around in the sugar, it gets much easier to then hand roll them into nicely shaped balls.
These Brownie Crinkle Cookies bake into perfect pillowy mounds. They have a nice rounded shape to them with a chewy, brownie texture. And they taste just like a brownie, only easier to pop into your mouth!
Ingredients:
- 1 boxed brownie mix
- 1 cup flour
- 3 eggs
- 1/3 cup oil
- powdered sugar (for rolling dough balls in)
Directions:
- Preheat oven to 350 degrees.
- In your stand mixer, beat together the brownie mix, flour, eggs and oil. The dough will be very thick and sticky.
- Roll dough into small balls (I used a small cookie scoop for this), drop into a bowl of powdered sugar and roll around until completely covered.
- Place on cookie sheet, lined with parchment paper, 2 inches apart.
- Bake 8 - 9 minutes or until cookies just start to firm up. Transfer to a cooling rack.
