As I mentioned a few days back, I had my gallbladder removed about a month ago. After spending months with pain and nausea, now I can finally get back to trying and sharing new recipes. Today we’re talking about this delicious Crockpot Honey Balsamic Chicken.
There’s something so satisfying about a good sandwich piled high with moist and tender shredded chicken in a flavorful sauce. And this recipe couldn’t be any easier!
All you have to do is whisk together some ingredients and pour it over chicken in the crockpot. Walk away for a few hours and let the crockpot work its magic. All that’s left to do is shred the cooked chicken and thicken up the sauce.
We ate our honey balsamic shredded chicken on some buns but it could be used in many other ways. You could use the chicken in quesadillas, tacos, on salads, nachos, etc. A very easy and versatile recipe!
Ingredients:
- 1 & 1/2 to 2 lbs boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1/4 cup low sodium soy sauce
- 1/2 cup honey
- 1/4 cup bbq sauce
- 3 tablespoons brown sugar
- 2 tablespoons olive oil
- 4 garlic cloves, minced
- 3 - 4 tablespoons cornstarch
Directions:
- Place chicken breasts in the crockpot.
- In a mixing bowl, whisk together the vinegar, soy sauce, honey, bbq sauce, brown sugar, olive oil and garlic. Pour over chicken.
- Put the lid on the crockpot and cook on high for 3 - 4 hours or until chicken starts to fall apart.
- Remove chicken from crockpot and shred with two forks.
- Empty liquids from the crockpot into a sauce pan. Heat on medium and whisk in cornstarch. Continue cooking until sauce thickens.
- Put shredded chicken back into crockpot. Once sauce has thickened, pour it over chicken and mix well.
