This easy Ham and Potato Chowder recipe is perfect for a post-holiday meal. Why? Because you can easily use up any leftover ham and corn you have lying around.
It only takes about 30 minutes from start to finish to make this thick and hearty soup. It’s loaded with chunks of potatoes, corn and ham.
This chowder is creamy and so delicious. It’s chock-full of delicious flavor and filling enough for a single pot meal.
Ingredients:
- 1/4 cup unsalted butter
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 and 1/2 cups corn
- 2 tablespoons flour
- 3 and 1/2 cups milk
- 2 large russet potatoes, peeled and diced
- 10oz ham steak, diced (about 1 cup)
- salt and pepper to taste
- bacon for garnish, optional
Directions:
- In a large stockpot over medium heat, melt butter. Once melted, add onion and garlic. Cook until onions are translucent.
- Add corn, stir to mix. Sprinkle in flour and stir to mix well. Cook for 1 minute, stirring often.
- Whisk in milk. Cook about 2 minutes until slightly thickened, stirring often.
- Add potatoes and bring it to a boil. Reduce heat to low and simmer until potatoes are fork tender.
- Stir in the ham and salt and pepper to taste. Cook a few more minutes until the ham has warmed up.
