
This fried rice recipe is a really great way to use up either some left over rice or any extra meat or poultry you may have lurking in the fridge. I made mine with chicken but you could easily substitute any protein source of your liking.
This recipe is really easy to make and only take a few minutes to whip up. It tastes delicious while not being too salty or rich. I made mine with white rice but brown rice works well too. Enjoy!

If you’re looking for an easy dinner with tons of flavor, this is it! Simply add all of the ingredients into your crock pot and walk away. You end up with moist, easily shreddable chicken with a nice spicy flavor. It does have a lot of kick so if you don’t like things hot, go a little lighter on the cayenne.
And to save a little more time, I used an Uncle Ben’s packet of white Ready Rice. Absolutely perfect for a quick healthy weeknight meal.

During the work week I’m all about quick meals that require little prep time and cook fairly quickly. I’m not a very good morning person and it didn’t help that the granite company wanted to come at the crack of dawn to do their templating for my kitchen counters. Since I work from home, it’s been years since I’ve been up that early.
So by the time dinner rolled around, I was out of energy. Luckily this chicken fried rice can be done in a matter of minutes. I loved the taste and the chicken and brown rice make it a very filling meal.
