Easy Cheesy Grilled Potatoes With Bacon

With Summer comes the ease of cooking outside on the grill.  One of my favorite side dishes with grilled steaks or chicken breasts is potatoes cooked on the grill.  I usually just slice them and add onion between the slices then wrap them in foil but this time I wanted something different.

I took my inspiration for these delicious grilled potatoes from restaurants like Texas Roadhouse who feature fries smothered in melted cheese and bacon. So I threw some stuff together and they came out mouth watering good.

Loaded Baked Potato Casserole

I can’t believe Christmas is just a few days away!  Where has this year gone?  I have a good recipe to share with you that I tried for the first time this past week.  So if you’re looking for a unique casserole to take for that holiday party, stay tuned!

This casserole has all the goodies you’d find on a loaded baked potato with a little bit of ranch added in.  All you need to do is mix the ingredients into a baking pan and you’re done.  Makes for a quick and easy holiday party dish.  I like to make casserole recipes like this in a disposable aluminum pan so I can take it and forget it.  No worrying about getting your pan back plus no cleanup!  Happy holidays!

Here’s another all in one dinner option that’s being added to my regular rotation of meals.  It’s everything you need for a complete dinner except a veggie.  But an easy solution is to just add a side of steamed broccoli or a simple salad.

This buffalo chicken and potato casserole is super spicy.  If you’re not a fan of hot sauce or a lot of spice then this is not for you.  It’s packing a nice kick of heat.  But between the cheese, bacon and hot sauce it’s a delicious meal.

Buffalo Chicken and Potato Casserole

Ingredients:

2 -3 lbs boneless, skinless chicken breasts, cut into ½” pieces
6 -8 medium potatoes, cut into ½” cubes, skin on
1/3 cup olive oil
1 & 1/2 teaspoon salt
1 tablespoon black pepper
1 tablespoon paprika
2 tablespoon garlic powder
6 tablespoon hot sauce

2 cups Cheddar & Monterey Jack cheese blend
1 cup crumbled bacon

Directions:

1.  Preheat oven to 500°.  In a large mixing bowl; whisk together the olive oil, salt, paprika, garlic powder and hot sauce.  Toss in potatoes until well coated.

2.  Spray a 13×9 baking dish with non-stick cooking spray.  With a slotted spoon, scoop out potatoes leaving as much sauce mixture behind as possible.  Add potatoes to baking dish and cook uncovered for 45 minutes, stir often.

3.  While potatoes are baking, toss chicken in remaining hot sauce mixture and let marinate.  When potatoes are crispy and fork tender, add raw chicken on top of the cooked potatoes.  Spread cheese and bacon evenly on top.

4.  Lower oven temp to 400° and continue baking uncovered for another 15 – 20 minutes until golden brown.  Serve with sour cream or ranch dressing if desired.

I’d say that any recipe that starts with cheese and bacon has got to be a hit.  And these grilled potatoes are no exception.  They were amazing!  Perfectly cooked and the bacon, cheese and butter gives them fabulous flavor.

If you’ve ever been to the Texas Roadhouse restaurant, their “cheese fries” appetizer is one of our favorites.  These potatoes tasted just like them!  They have just about the same exact taste except theirs are made with steak fries and mine are made with fresh potatoes.  Yum!

Chipotle Cheddar Mashed Potatoes

Chipotle peppers in adobo sauce give these mashed potatoes a nice smoky flavor.  They went perfectly with our grilled steak and chicken last night.  Add in butter and cheddar cheese and you get smooth and creamy mashed potatoes with some unique flavors.  This recipe makes a pretty big batch of potatoes.  For the two of us, we’ll get two meals out of this.  Yummy!
