Yesterday just seemed like one of those days.  It just felt like nothing was going right…at all!  I’ll spare you all the details but let’s just say it included wasting 3 hours of my Sunday afternoon running around like an idiot correcting someone else’s error.  Not the hubs’ so don’t worry!

So by the time dinner came around, I just did not feel like going out for dinner.  So instead, I whipped up this yummy pepperoni pizza.

I had saved this pizza crust recipe a while back and had been dying to give it a try.  The crust turned out really good.  The bottom was nice and crisp while the crust was nice and soft.  A perfect late Sunday evening dinner while we enjoyed one of our guilty pleasures, True Blood.

Pepperoni Pinwheels

I usually keep some pepperoni and mozzarella cheese around for those times that dinner has you stumped but you don’t really want to eat out.  So homemade pepperoni pizza is usually my go to in a pinch.

I didn’t feel like pizza over this past weekend so I went on a search for something different to try.  I came upon pepperoni pinwheels.  They looked so yummy and sounded super easy so I had to try the recipe.

They are amazing!  We totally loved the flavors and the convenience of basically eating pepperoni pizza in a cinnamon bun type roll.  You can dip them in marinara sauce if you please but they taste just as great without any sauce at all.  A perfect snack on a lazy Sunday afternoon.

Pizza Panini

Yesterday was a busy day for me so I was in need of a quick dinner solution.  Luckily I had all the ingredients needed to make us some hot, crispy pizza paninis.

All you need for this simple panini sandwich is some bread, sauce, mozzarella cheese and pepperoni.  Try not to leave the sauce on the bread too long before cooking it.  The bread gets a little soggy if you leave it sit too long to absorb into the soft bread.

The possibilities for this panini are endless.  Treat it like a pizza and add any desired topping you wish.  This makes a great snack late at night too!

Easy Tomato Pasta Sauce

My first attempt at homemade spaghetti sauce was so successful that it gave me the courage to try another tomato sauce recipe.  I liked my first pasta sauce recipe but it was a little to chunky for my husband’s liking.  This simple homemade tomato sauce recipe has about half of the ingredients and is actually tastier.  After cooking the sauce for an hour, process it in a food processor to achieve a smooth texture.
