I know I’ve mentioned this before but hubs loves anything mint and chocolate.  But he absolutely loathes cupcakes!  So when I found this recipe for Chocolate Mint Oreo Cupcakes I knew I had to somehow convert it to cake form.  It looked so delicious and I loved the idea of  whole Oreos on the bottom.

I decided to make mine in a 13×9 baking dish instead.  I simply just lined the bottom of my glass dish with the whole Oreos and followed the rest of the recipe as is, except for adjusting the cooking time too.  The cake version turned out really well.  The cake was moist and the icing was just the right amount of sweet and minty.

Chocolate Pudding Cake With Vanilla Cream Cheese Frosting

Boxed store brand cake mixes are good but you can make them even better by adjusting the ingredients just a bit.  By tweaking it a little it makes the cake super moist.  I always get a bunch of compliments  and people are surprised that it’s just a simple doctored up cake mix.

I made this chocolate cake for hubs on Valentines Day; hence the red, white and pink M&M’s on top.  The cake is so soft and moist and the icing is perfectly sweet without being too sugary sweet.

Chocolate Pudding Cake

Ingredients:

1 boxed Devil’s Food cake mix
1 box instant chocolate pudding
4 eggs
3/4 cup vegetable oil
3/4 cup water
1 cup semi-sweet chocolate chips (optional)

Directions:

1.  Preheat oven to 350°.  Mix together all of the above ingredients.  Spray baking pans (I used two 9″ rounds) with non-stick cooking spray.  Pour batter into pan and bake according to cake mix directions, or until toothpick comes out clean (around 25 minutes for the round pans).  Let cool completely before icing.

Vanilla Cream Cheese Frosting

Ingredients:

1 stick unsalted butter, room temp
4oz cream cheese, room temp
4 cups powdered sugar
2 teaspoons vanilla extract
4 – 6 tablespoons milk
plain M&M candies (optional)

1.  Beat together the butter and cream cheese until smooth.  Gradually start adding in the powdered sugar and milk, alternating each.  You may not use all of the milk.  Use as much as you need to reach the consistency you’d like.  Add the vanilla extract and mix well.

2.  Frost your cake and sprinkle M&Ms on top if desired.  Enjoy!

Soft Sugar Cookie Bars

This recipe for soft sugar cookie bars would be perfect for taking to a family picnic or gathering.  It makes a huge 13 x 18 pan full of yummy sugar cookie bars.  They are super soft and the cream cheese icing is to die for.  It’s not too sweet and sugary, just right.  And they look so pretty in the pan or cut up into squares and arranged on a platter.

Soft Sugar Cookie Bars

Ingredients:

2 sticks unsalted butter, room temp
2 cups sugar
4 eggs
2 teaspoons vanilla extract
5 cups flour
1 teaspoon salt
1/2 teaspoon baking soda

Directions:

1.  Cover your 13 x 18 baking pan in foil and set aside.  Preheat oven to 375°.

2.  In the bowl of your electric mixer, cream together the butter and sugar until smooth.  Add eggs one at a time until blended.  Add vanilla.

3.  In a separate bowl; mix the flour, salt and soda.  Gradually add to your wet mixture and blend until combined.

4.  Spray your foil covered pan with non-stick cooking spray and spread dough evenly into pan.  Bake for 15 – 20 minutes or until top starts to brown and toothpicks come out clean.  Let cool completely before icing.

Frosting Ingredients:

1 stick unsalted butter, room temp
4 oz cream cheese, room temp
1 teaspoon vanilla extract
¼ teaspoon salt
4 cups powdered sugar
3 – 5 tablespoons milk

Directions:

1.  With your electric mixer and a whisk attachment, cream together the butter and cream cheese.  Add vanilla and salt.

2.  Gradually begin adding powdered sugar and milk and mix well between.  Continue until you reach the desired icing consistency.  Spread onto cooled sugar cookie bars and top with sprinkles if desired.

Chocolate Whoopie Pies

I really can’t see why anyone would dislike whoopie pies.  They’re basically hand held pieces of cake.  These particular whoopie pies are made with a devil’s food cake mix and icing made with marshmallow cream.  Yum!

The cake tops turned out super soft and moist.  Which kinda made them harder to eat but that’s half the fun.  The messier the better I say, it usually means you’re eating something delicious if you’re willing to be covered in it!

And oh my, the icing!  It’s a sweet and sugary vanilla icing with a nice marshmallow undertone.  So good.  You’ll get a good number of nice sized whoopie pies out of this recipe.  They end up being about 3 inches across.
