I can’t believe Christmas is just a few days away!  Where has this year gone?  I have a good recipe to share with you that I tried for the first time this past week.  So if you’re looking for a unique casserole to take for that holiday party, stay tuned!

This casserole has all the goodies you’d find on a loaded baked potato with a little bit of ranch added in.  All you need to do is mix the ingredients into a baking pan and you’re done.  Makes for a quick and easy holiday party dish.  I like to make casserole recipes like this in a disposable aluminum pan so I can take it and forget it.  No worrying about getting your pan back plus no cleanup!  Happy holidays!

Chicken Parmesan Casserole Bake

It feels like forever since I posted my last recipe here.  Ever since we had to put our dog down in January, I just had no interest in cooking or baking.  His illness came as a shock to us and I wasn’t prepared to have to say goodbye to him so suddenly.  At 12 I knew we had a limited amount of years left with him but I had no idea it would just come out of nowhere and hit us like a train.

Now 8 months later, we’ve adopted a new puppy and things are looking up!  We’ve had Teddy now for about a month and I feel so much better.  Yes, he’s a bit of a terror at times but he’s brought so much happiness and light back into our lives.

Buffalo Chicken and Potato Casserole

Here’s another all in one dinner option that’s being added to my regular rotation of meals.  It’s everything you need for a complete dinner except a veggie.  But an easy solution is to just add a side of steamed broccoli or a simple salad.

This buffalo chicken and potato casserole is super spicy.  If you’re not a fan of hot sauce or a lot of spice then this is not for you.  It’s packing a nice kick of heat.  But between the cheese, bacon and hot sauce it’s a delicious meal.

Buffalo Chicken and Potato Casserole

Ingredients:

2 -3 lbs boneless, skinless chicken breasts, cut into ½” pieces
6 -8 medium potatoes, cut into ½” cubes, skin on
1/3 cup olive oil
1 & 1/2 teaspoon salt
1 tablespoon black pepper
1 tablespoon paprika
2 tablespoon garlic powder
6 tablespoon hot sauce

2 cups Cheddar & Monterey Jack cheese blend
1 cup crumbled bacon

Directions:

1.  Preheat oven to 500°.  In a large mixing bowl; whisk together the olive oil, salt, paprika, garlic powder and hot sauce.  Toss in potatoes until well coated.

2.  Spray a 13×9 baking dish with non-stick cooking spray.  With a slotted spoon, scoop out potatoes leaving as much sauce mixture behind as possible.  Add potatoes to baking dish and cook uncovered for 45 minutes, stir often.

3.  While potatoes are baking, toss chicken in remaining hot sauce mixture and let marinate.  When potatoes are crispy and fork tender, add raw chicken on top of the cooked potatoes.  Spread cheese and bacon evenly on top.

4.  Lower oven temp to 400° and continue baking uncovered for another 15 – 20 minutes until golden brown.  Serve with sour cream or ranch dressing if desired.

No Boil Rigatoni Bake

I can’t imagine that there is anyone who doesn’t appreciate a quick, throw together meal.  Especially when it tastes as good as this casserole does. When I saw this recipe on Plain Chicken, I just expected it to taste like regular pasta with sauce.  But in reality it tastes so much like lasagna!

Within an instant you can have this simple dinner assembled and in the oven.  And it gives you the freedom to walk away from the kitchen and get things done while it bakes.  Now that’s my idea of the perfect busy day meal!
