Best baked beans EVER!!!  In case you can’t tell, hubs and I really liked these smokey baked beans.  I was really worried that I wouldn’t like them since the recipe calls for a wee bit of beer.  Being someone who hates beer, I thought these beans weren’t gonna be my cup of tea.  And even though I could still smell the beer after they baked, you couldn’t taste it at all.

There is just something about all these flavors that really meld together in such perfect harmony.  It’s really hard to describe but the smokiness from the bacon and chipotle pepper mixes perfectly with the sweetness of the ketchup and brown sugar.  And there’s just the right amount of zing to bring it all together.

Smokey Chipotle Baked Beans

from Cook Like a Champion

Ingredients:

28oz can Great Northern beans, drained and rinsed
half of a small onion, minced (I grated mine for a finer texture)
1/2 cup ketchup
2 tablespoons molasses
2 tablespoons brown sugar
1/4 cup beer
1 chipotle pepper in adobo sauce, seeded and minced
3 slices of bacon, cooked and crumbled

Directions:

1.  Preheat oven to 350°.  In an oven safe baking dish, mix together all of the ingredients and cover with foil.

2.  Bake for about 1 hour or until beans and sauce thicken to desired consistency.
