I can’t believe Christmas is just a few days away! Where has this year gone? I have a good recipe to share with you that I tried for the first time this past week. So if you’re looking for a unique casserole to take for that holiday party, stay tuned!
This casserole has all the goodies you’d find on a loaded baked potato with a little bit of ranch added in. All you need to do is mix the ingredients into a baking pan and you’re done. Makes for a quick and easy holiday party dish. I like to make casserole recipes like this in a disposable aluminum pan so I can take it and forget it. No worrying about getting your pan back plus no cleanup! Happy holidays!

I love fresh broccoli and it’s one of the few vegetables that hubs will actually eat without any fuss. But just cooking them with salt and pepper can get a little boring after a while. So I decided to try my hand at some roasted broccoli with a handful of baby carrots thrown in.
This unique recipe caught my eye because it calls for a nice variety of spices as well as grated cheese and bread crumbs. I knew that would result in some great flavors. And just as I expected, these veggies were very flavorful! I left mine a touch on the crisp side but if you prefer them softer, add a few more minutes to your cooking time.

The past couple of years I have had zero luck in growing my own tomatoes. So this year, I said the heck with it. But I do miss the taste of fresh from the vine warm tomatoes.
While I was grinding away on this homemade salsa I kept thinking “this isn’t gonna be the same with canned tomatoes”. But I was quite wrong. The garlic, onion and fresh cilantro give it enough of a “fresh” taste. You really can’t tell that this salsa is from canned tomatoes.
Phew, this is super hot stuff though! If you can’t stand the heat, you may want to go lighter on the cilantro and maybe even omit one can of the Rotel tomatoes. It makes my mouth burn but I kinda enjoy the delicious torture!

Best baked beans EVER!!! In case you can’t tell, hubs and I really liked these smokey baked beans. I was really worried that I wouldn’t like them since the recipe calls for a wee bit of beer. Being someone who hates beer, I thought these beans weren’t gonna be my cup of tea. And even though I could still smell the beer after they baked, you couldn’t taste it at all.
There is just something about all these flavors that really meld together in such perfect harmony. It’s really hard to describe but the smokiness from the bacon and chipotle pepper mixes perfectly with the sweetness of the ketchup and brown sugar. And there’s just the right amount of zing to bring it all together.
