
These oatmeal cookies are loaded with dried cranberries and white chocolate chips. They smelled like heaven when they were baking, mmm! They’re soft and a little bit tart from the cranberries. But don’t worry, the white chocolate chips mellow the tartness out nicely. So good!


Cranberry White Chocolate Oatmeal Cookies

Ingredients:
2/3 cup butter, room temp
2/3 cup brown sugar
2 eggs
1 & 1/2 cups old-fashioned oats
1 & 1/2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
6oz bag dried cranberries
2/3 cup white chocolate chips
Directions:
1. Preheat oven to 375º. Using an electric mixer, beat butter and sugar together until light and fluffy. Add eggs, mix well.
2. Combine oats, flour, baking soda and salt in a separate mixing bowl. Gradually add to butter mixture, mixing well after each addition.
3. Stir in dried cranberries and white chocolate chunks. Using a medium cookie scoop, scoop dough onto parchment lined baking sheets about 2″ apart.
4. Bake 10 – 12 minutes or until lightly browned. Remove from baking sheets and let cool completely.
