Tonight for dinner we grilled up these marinated chicken breasts and made fajitas out of them.  I was interested to see how the chicken marinade would taste since it was based with Italian dressing.  And it was quite tasty.

Once you add the rest of the spices, it really transforms the Italian dressing.  I liked that it wasn’t overwhelmed with dressing flavor.  Just a nice spiced marinade that left the chicken very flavorful and quite moist.

Grilled Chicken Fajitas

from Plain Chicken

Ingredients:

1/2 cup Italian dressing
1 tablespoon chili powder
1 teaspoon cumin
1/2 teaspoon brown sugar
1/2 teaspoon black pepper
1/4 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon chipotle

1 – 2 lbs boneless, skinless chicken breasts

Directions:

1.  In a large Ziploc storage bag, add all ingredients except the chicken.  Seal bag and toss to mix marinade well.  Add chicken, toss again to coat all of the chicken.  Refrigerate bag for 2 or more hours.

2.  Grill chicken.  Remove from grill, rest for 10 minutes.  Slice chicken into strips.  Serve with tortilla shells and desired toppings.
