Chocolate Whoopie Pies

I really can’t see why anyone would dislike whoopie pies.  They’re basically hand held pieces of cake.  These particular whoopie pies are made with a devil’s food cake mix and icing made with marshmallow cream.  Yum!

The cake tops turned out super soft and moist.  Which kinda made them harder to eat but that’s half the fun.  The messier the better I say, it usually means you’re eating something delicious if you’re willing to be covered in it!

And oh my, the icing!  It’s a sweet and sugary vanilla icing with a nice marshmallow undertone.  So good.  You’ll get a good number of nice sized whoopie pies out of this recipe.  They end up being about 3 inches across.

Whoopie Pies

from Confession From a Cookbook Queen

Ingredients:

1 box Devil’s Food cake mix
3 eggs
1/2 cup vegetable oil
1/2 cup water

Directions:

1.  Preheat oven to 400°.  With an electric mixer, mix together all of the ingredients until blended.

2.  With a medium cookie scoop (or tablespoon) drop batter onto parchment lined baking sheets at least 2 inches apart.  Bake for 8 minutes or until tops are firm when touched.  Cool on wire racks.

Vanilla Filling

from Woman’s Day

Ingredients:

6 tablespoon unsalted butter, melted
1 cup plus 2 tablespoons powdered sugar
1 cup plus 2 tablespoons marshmallow fluff
1 & 1/2 tablespoon vanilla extract

Directions:

1.  Beat together ingredients.  Spread onto flat surface of one cake piece and top with another.
