
Since this past weekend was the 4th of July, I was feeling a bit patriotic. And what’s more American than apple pie? But of course apple pie is a lot of work to make. So naturally, I took the easy way out and made apple crisp instead!
Basically you get the same flavors as apple pie but without the yummy pie crust. But that’s OK, I rather like the oat topping myself. And since hubs won’t eat apple pie, it really doesn’t make sense for me to make a whole apple pie to eat by myself. Now that’s just darn right piggish!
Simple Apple Crisp
Ingredients:
2 Granny Smith apples; peeled, cored and sliced
2 Golden Delicious apples; peeled, cored and sliced
3 tablespoons flour
1/4 cup brown sugar
1/4 cup white sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
splash of lemon juice
Topping:
3/4 cup flour
1/3 cup oats
1/3 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
6 tablespoons cold butter
Directions:
1. Preheat oven to 350°. Peel, core and slice apples. Place in a bowl and sprinkle with enough lemon juice to coat all slices. Set aside.
2. In a large mixing bowl, combine flour and sugars with the cinnamon, nutmeg and allspice. Mix well. Add apples slices and toss until coated completely with sugar spice mix. Transfer to a baking dish sprayed with non-stick cooking spray. Set aside.
3. In a small mixing bowl, combine all topping ingredients except the butter. Mix well. Add butter in chunk pieces. Using a fork, blend butter into mixture until small lumps form. Evenly top apples with this mixture.
4. Bake uncovered for 35 – 40 minutes. Let cool slightly before serving.
