I don’t know about anyone else but sometimes I’m just craving something salty.  Even though chips can be tasty, they’re also super salty and greasy.  So next time you have a hankering for a bag of potato chips, try making your own baked version.

These homemade potato chips turn out nice and crispy and you get to control the amount of salt.  All it takes is a couple fresh potatoes and less than 30 minutes for a healthier snack alternative.

Baked Potato Chips

Ingredients:

2 large potatoes, washed
3 tablespoon olive oil
salt

Directions:

1.  Preheat oven to 400°.  Thinly slice potatoes into uniform slices.  Place in bowl of cold water to remove excess starch.  Drain and pat slices dry.

2.  Toss potato slices with olive oil in a large bowl.  Place slices evenly on silicone lined baking sheets.  Sprinkle with desired amount of salt.

3.  Bake for 10 minutes then turn slices over.  Bake for another 10 minutes.  Check often and remove any overdone pieces before they burn.  Remove from even and let rest until crispy.

Just had this last week! I placed a couple of whole shallots and chives over mine, and placed those along with the potatoes to bake. Yum yum!
