This baked potato recipe is bound to become one of my favorites. Why? Because it is so darn easy and doesn’t require the use of your oven on a hot summer day. Just wash some potatoes, wrap them in foil and pop them in the crock pot. Poof! Four hours later you get perfectly baked potatoes!
This recipe will be great on summer days when we’re spending time outdoors and I don’t want to have to concentrate on dinner. Start them in the early afternoon then head outside and do some yard work. Later that evening, grill some steaks and you’re done! I topped ours off with some frozen cheesy broccoli. Yum!

What a great tip! I always forget to put the potatoes on and we end up eating dinner much later than I planned. Not anymore!
