With only 11 days until Christmas, it’s officially cookie time!!  I’ve been baking my butt off every evening and I’ve got loads of new cookie recipes to share with you.  First up…coconut macaroons.

I love coconut, pretty much in anything!  But coconut macaroons are one of my guilty pleasures.  This easy macaroon recipe is to die for!  They are amazingly moist and have an awesome almond flavor.

Coconut Macaroons

adapted from Momofuku For Two

makes 2 dozen

Ingredients:

2 & 2/3 cup shredded sweetened coconut
2/3 cup sugar
1/3 cup all-purpose flour
4 egg whites
1/2 teaspoon almond extract

Directions:

1.  Preheat oven to 325°.  Combine the coconut, sugar and flour.  Mix until well combined.  Stir in the egg whites and almond extract.

2.  Using a small cookie scoop, drop cookies on parchment lined cookie sheets.  Bake for 18 – 20 minutes or until edges are golden brown.
