
Another summer day, another awesome grilling recipe! Once again it’s way too hot here to cook inside so I took to the grill for these yummy potatoes. The honey adds a nice sweetness to these potato slices while the spices add some heat in the background. I’ll be making these potatoes again, they were the perfect side dish to our grilled chicken and fresh corn on the cob. Yum!
Honey Chipotle Grilled Potatoes
Ingredients:
3 – 4 medium sized Idaho potatoes - cut into 1/4″ slices, skin on
2 tablespoons olive oil
2 tablespoons water
2 tablespoons honey
1 & 1/2 teaspoon paprika
1/2 teaspoon cumin
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon chipotle powder
1/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
1. In a medium mixing bowl, whisk together all of the spices along with the oil, water and honey.
2. Wash potatoes and slice into 1/4 inch slices, leaving the skins on. Toss into the bowl with the spice mixture. Toss to coat all of the potatoes.
3. Cook coated potato slices on grill set on medium, turning once. When you place the potatoes on the grill, there will be some of the spice mixture left over. While the potatoes are cooking, baste with leftover spice mixture. Cook for a total of 20 – 25 minutes.
