Chicken Fajitas

chicken fajitas

Well another day, another awesome chicken recipe.  As you may not know about me is that I’m a chicken fanatic.  But plain, simple chicken can get very boring after a while.  So, I’ve been forcing my husband and I to try some new flavors.

If we go out to eat to a restaurant that has sizzling fajitas, my husband goes wild for the scent of them wafting past our table.  I’ve got to practically hold him down in his seat from floating in the air following the heavenly scent.  But as much as he loves the scent, he hates all the veggies they give you with the meat.  So alas, he never orders them.

When I saw this recipe on the blog Chaos In The Kitchen, I immediately thought of my husband’s obsession with the scent of sizzling fajitas and thought I’d give it a try.  Whoa, the flavors are intense!  They smelled amazing while they were cooking on the grill and they tasted just as yummy.

Just as a warning though, they do pack a bit of heat!  Oh, and my husband loved them!

Chicken Fajitas

Ingredients:

1 – 2 lbs boneless, skinless chicken breasts
2 tablespoon oil
2 teaspoon chili powder (I used 1 tsp ancho and 1 tsp chipotle and they were medium-spicy)
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon oregano
1 teaspoon cumin
1 teaspoon salt

Directions:

1.   In a large ziploc bag combine all of the ingredients.  Seal bag and shake well to thoroughly coat all of the chicken.  Refrigerate for 2 hours if desired.

2.  Grill chicken until cooked to your liking.  Let chicken sit for 5 minutes before slicing into slices.  Serve as you like with tortillas, shredded cheese, sauteed peppers, etc.
