Grilled Maple Chicken Skewers

Chicken is a staple in our house, especially grilled during summer months.  But plain chicken gets so very boring.  So to give it a little kick, I like to try different sauces and marinades.

Yesterday I gave this spicy maple barbecue sauce recipe a try.  It takes a good while for this sauce to thicken up but you do end up with a nice and sweet sauce.

The recipe yields a large amount of barbecue sauce though so be prepared to either cut the recipe in half or you can save a bunch for later use.

Grilled Maple Chicken Skewers

Ingredients:

1 – 2 lbs skinless chicken tenderloins
wooden skewers soaked in water

1 & 1/4 cups ketchup
3/4 cup apple cider vinegar
2 & 1/2 cups chicken broth
1/2 cup real maple syrup
2 tablespoon butter
2 tablespoon Worcestershire sauce
1 tablespoon Dijon mustard
1 teaspoon red pepper flakes

Directions:

1.  In a saucepan, combine the barbecue sauce ingredients and bring to a boil.  Reduce heat and simmer for about an hour until sauce is thickened and reduced.

2.  When sauce is finished, carefully thread each tenderloin on a separate wooden skewer that has been soaked in water.

3.  Place each skewer on hot grill on low heat.  Baste with maple barbecue sauce, several times on each side until chicken is cooked through.
