Summertime is the ideal time for a hearty scoop of yummy baked beans. They go great with any type of grilling you’re doing. So in my quest for eating non-processed, preservative free food, I thought I’d try to make my own instead of grabbing the canned version off the grocery store shelf.
Phew, one warning though – this recipe takes a great deal of time to cook. Once you assemble the ingredients, it has to bake for 5 – 6 hours!
Even though it takes a bit of time, you’re left with a huge pot full of beans. I fed 6 people this past weekend and was still able to freeze 3 additional dinner portions for both hubby and I.
These beans turned out really good. They have a nice, sweet maple flavor to them. This recipe would be a nice and easy choice for your next picnic gathering.

Maple Baked Beans
from Epicurious
Ingredients:
1 pound dried navy or great northern beans
2 tablespoons brown sugar
2 teaspoons salt
1/4 teaspoon freshly ground black pepper
2 tablespoons spicy brown mustard
2 tablespoons molasses
1/4 cup ketchup
1/2 cup pure maple syrup
Directions:
1. In a large pan, cover the beans with water. Bring to a boil and simmer until tender, about 1 hour.
2. Preheat oven to 300°F. In a bowl, combine everything else. Stir in the beans.
3. Pour the bean mixture into a dutch oven. Add just enough boiling water to the pot to cover everything.
4. Cover the pot with aluminum foil, then a lid. Bake for 5 hours, checking hourly to make sure the beans aren’t drying out. (Add more water as necessary to keep them submerged.)
5. Uncover for the last half hour to brown the top, if desired.
