I bought a bag of Hershey’s cinnamon chips thinking that I would use them in pancakes. But I saw this cookie recipe on the back of the bag and decided to try it instead.
I like oatmeal cookies but I hate raisins, so this seemed like the perfect cookie recipe to me as long as I left out those little buggers.
The cookies turned out really good. They are so soft and moist. My batch yielded a little less cookies than stated in the recipe but that was because I made mine a little larger.

Oatmeal Cinnamon Chip Cookies
Ingredients:
1 Cup Butter (softened)
1 Cup Light Brown Sugar
1/3 Cup Granulated Sugar
2 Eggs
1 & 1/2 Teaspoon Vanilla Extract
1 & 1/2 Cups All Purpose Flour
1 Teaspoon Baking Soda
2 & 1/2 Cups Quick Cooking Oats
10oz Bag Cinnamon Chips
Directions:
1. Heat oven to 350°F.
2. Beat butter, brown sugar and granulated sugar in bowl until creamy. Add eggs and vanilla; beat well. Combine flour and baking soda; add to butter mixture, beating well. Stir in oats, cinnamon chips (batter will be stiff). Drop by heaping teaspoons on ungreased cookie sheet.
3. Bake 10 to 12 minutes on until lightly browned. Cool 1 minute; remove from cookie sheet to wire rack. About 4 dozen.

I bought a bag of cinnamon chips about a week ago and was wondering what to do with them ~ now I know. I don’t like raisins in my oatmeal cookies either, so these sound perfect for me. Thanks for the idea
