As I mentioned the other day, I’ve bought some new cookbooks for healthier eating. Today’s new recipe comes from “The Best of Cooking Light Everyday Favorites” cookbook.
I really love this cookbook. It has so many delicious and healthy recipes to choose from, even a whole section of light desserts! And as an added bonus, each recipe lists the nutritional facts.
So for our dinner last night, I chose the Cheese Enchilada Casserole located on page 114. This quick casserole recipe gives you a yummy layered enchilada instead of the traditional rolled version. This casserole is only 299 calories per serving (1 1/4 cups).
The only thing I would note is that the recipe calls for a full cup of taco sauce over the top. My husband and I both agreed that it was a little much. The strong taste of the taco sauce took over the casserole. Next time I would use probably about half of what the recipe calls for.
Cheese Enchilada Casserole
from Cooking Light1 Cup Reduced Fat Shredded Sharp Cheddar Cheese
1 Cup Chopped Tomato
1 Cup Fat Free Cottage Cheese
2 Teaspoons Chili Powder
2 Garlic Cloves Minced
9 (6 inch) Corn Tortillas
Cooking Spray
1 Cup Taco Sauce
1/4 Cup Shredded Monteray Jack Cheese
1. Preheat oven to 375°
2. Combine the first 6 ingredients. Arrange 3 tortillas in a 1 1/2 quart baking dish coated in cooking spray. Spread half of the cheese mixture over tortillas.

3. Repeat with 3 more tortillas and the other half of the cheese mixture. Top with the remaining 3 tortillas.
4. Pour the taco sauce over the tortillas and sprinkle with Monteray Jack cheese.

5. Bake at 375° for 20 minutes or until the cheese melts.
