Cheese Enchilada Casserole

enchilada casserole recipeAs I mentioned the other day, I’ve bought some new cookbooks for healthier eating. Today’s new recipe comes from “The Best of Cooking Light Everyday Favorites” cookbook.

I really love this cookbook.  It has so many delicious and healthy recipes to choose from, even a whole section of light desserts!  And as an added bonus, each recipe lists the nutritional facts.

So for our dinner last night, I chose the Cheese Enchilada Casserole located on page 114.  This quick casserole recipe gives you a yummy layered enchilada instead of the traditional rolled version.  This casserole is only 299 calories per serving (1 1/4 cups).

The only thing I would note is that the recipe calls for a full cup of taco sauce over the top.  My husband and I both agreed that it was a little much.  The strong taste of the taco sauce took over the casserole.  Next time I would use probably about half of what the recipe calls for.
