Snowed In: Chocolate Chip Banana Bread

snow storm 2010I cannot believe how much snow we got Friday evening into Saturday morning!  We had to dig our way outside since it was stacked against our doors.  My poor dog, a yellow lab, was barely visible when he attempted to go potty this morning.

We knew we had a ton of snow but I was shocked to see 23″ when we measured it!!  Holy crap!  We haven’t had this much snow at once for quite a few years.  My husband is 6′ 4″ and the snow came up to his knees!

snow storm 2010My poor husband has been shoveling off and on pretty much all day, along with pretty much all of our neighbors. I guess he should have thought more seriously about a snowblower when I asked if he wanted to buy one this past fall.

So because I feel horrible that he had to shovel snow all day, I made him a little treat.  A yummy loaf of chocolate chip banana bread!

snow 2010I had a few bananas that were going bad and I wanted to try something different.  I’ve never had banana bread with chocolate chips in it, so I thought what the heck.  I’ll give it a whirl.  I found the banana bread recipe on the recipe blog Chocolate Shavings.

It’s a simple recipe  that makes a generous and moist loaf of bread.  To my surprise, the chocolate blends really well with the bananas.  I will definitely make this recipe again.

Chocolate Chip Banana Bread – From Chocolate Shavings

1 1/2 cups of mashed ripe bananas (about 4 medium-sized bananas)
1/2 cup of granulated sugar
1/4 cup firmly packed light brown sugar
1/2 cup (1 stick) of unsalted butter, melted
1/4 cup of whole milk
1 large egg
1 1/2 cup of all-purpose flour
2 teaspoon of strong espresso
1 1/2 teaspoons baking soda
1 teaspoon of salt
5 ounces of bittersweet chocolate chips

Preheat oven to 350F.

In a medium bowl, stir in the banana, sugars, butter, espresso, milk and egg.
In another medium bowl, whisk together the flour, baking soda and salt. Make a well in the middle of the bowl and gently add in the banana mixture. Stir into just combined. Gently fold in the chocolate.

Fill a greased loaf pan with the batter and bake for about 30-40 minutes or until a toothpick inserted in the center comes out just clean.
